vanilla caramel mini cuppies
frankly, i baked these cuppies almost a month ago.. and i havent bake something good since the perfect chocolate cupcakes from previous posts. my regular gas oven is broke, i dont know why but it could be because the gas, not the oven.
i actually have an electric oven hanging around in kitchen waiting to be useful, but the oven is too small its barely could fit my muffin tin. few days ago i baked martha stewart's soft and chewy chocolate chip cookies using the electric oven, but this beautiful moron forgot to set the heat circulation. the result is brown and crispy cookies with very gooey center, very gooey like you-totally-underbaked-these-cookies. not good on day 1 but seriously good on day 3..
anyway..
these vanilla caramel cuppies were quite a hit among my juniors in campus (heehee!) well, my brother liked them too.. the caramel frosting is swiss meringue buttercream and the cake is yellow buttermilk cake, both from martha stewart's cupcakes book.
too bad, the caramel frosting cant stand jakarta's heat, it melted when i brought them to a market i attend few weeks ago, i couldnt sell them of course. who wants cupcakes with melting frosting by the way?
but in a room or cold temperature? WHOA! they're the best!
yellow buttermilk cupcakes
makes 36 standard cupcakes
3 cups cake flour (not self-rising)
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
2 1/4 teaspoons baking powder
1 1/2 teaspoons coarse salt
1 cup plus 2 tablespoons (21/4 sticks) unsalted butter, room temperature
2 1/4 cups sugar
5 large whole eggs plus 3 egg yolks, room temperature
2 cups buttermilk, room temperature
2 teaspoons pure vanilla extract
Fluffy Vanilla Frosting (page 302)
Round candy sprinkles (nonpareils), for decorating (optional)
1. Preheat oven to 350°F. Line standard muffin tins with paper liners. Sift together both flours, baking soda, baking powder, and salt.
2. With an electric mixer on medium-high speed, cream butter and sugar until pale and fluffy. Reduce speed to medium. Add whole eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Add yolks, and beat until thoroughly combined. Reduce speed to low. Add flour mixture in three batches, alternating with two additions of buttermilk, and beating until combined after each. Beat in vanilla.
3. Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until cupcakes spring back when lightly touched and a cake tester inserted in centers comes out clean, about 20 minutes. Transfer tins to wire racks to cool 10 minutes; turn out cupcakes onto racks and let cool completely. Cupcakes can be stored overnight at room temperature, or frozen up to 2 months, in airtight containers.
4. To finish, use a small offset spatula to spread cupcakes with frosting. Refrigerate up to 3 days in airtight containers; bring to room temperature and, if desired, decorate with sprinkles before serving.
caramel buttercream
Makes about 4 cups
1 cup plus 2 tablespoons sugar
1/4 cup water
1/4 cup heavy cream
12 ounces (3 sticks) unsalted butter, softened
4 large egg whites, room temperature
teaspoon pure vanilla extract
Directions
1. Bring 1/2 cup plus 2 tablespoons sugar and the water to a boil in a medium saucepan. Wash sides of pan with a wet pastry brush to prevent sugar crystals from forming. Cook, undisturbed, until caramel is dark amber. Remove from heat, and slowly add cream, stirring with a wooden spoon until smooth. Let cool.
2. Beat butter with a mixer on medium speed until pale and fluffy, about 3 minutes. Transfer to a large bowl.
3. Place whites and remaining 1/2 cup sugar in a heatproof mixer bowl set over a pot of simmering water. Whisk until sugar dissolves and mixture registers 160 degrees on a candy thermometer.
4. Remove from heat, and attach bowl to a mixer. Whisk on medium speed for 5 minutes. Increase speed to medium-high, and whisk until stiff, glossy peaks form, about 6 minutes. Reduce speed to medium, and add beaten butter, cup at a time, whisking well after each addition. Whisk in vanilla.
5. Switch to paddle attachment. With mixer on low speed, add caramel, and beat until smooth, 3 to 5 minutes. Use immediately, or cover, and refrigerate for up to 3 days. (Bring to room temperature, and beat on low speed until smooth before using.

so yes, finally i come up with a resolution, just finally.

a really good video apart from the cupcake baking involved, im a sucker for cupcake baking video so count me in for every video about cupcake baking, but this one wins me over for every aspects, every minutes and every moves in it.

bye bye 2009 a.k.a cheesecake-marbled brownies
pheew! 2009 been a quite year for me, lots of fun things happened and i certainly improved my baking skills in 2009. frankly, i dont like new year.. new year means new responsibilities, new problems, new things im clueless about. urrgh! its depressing!
so just you know, im not a fan of new year..
then lets talk about this bake goods i made several weeks ago.
cheesecake-marbled brownies!! YUMMY! while im typing this i actually thinking about baking these yummies again, alas, i'll be the only person who's munching on these and i wont do that for sure :(
cheesecake-marbled brownies from deb of smitten kitchen
Brownie batter
1 stick (1/2 cup or 4 ounces) unsalted butter, cut into pieces
3 ounces unsweetened chocolate, chopped
1 cup sugar
2 large eggs
1/2 teaspoon pure vanilla extract
2/3 cup all-purpose flour
Cheesecake batter
8 ounces cream cheese, well softened
1/3 cup sugar
1 large egg yolk
1/4 teaspoon pure vanilla extract
Plus
1/2 cup semisweet chocolate chips (i omit this)
Make brownie batter: Put oven rack in middle position and preheat oven to 350°F. Butter an 8-inch square baking pan. Heat butter and chocolate in a 3-quart heavy saucepan — though I did mine double-boiler style, placing the mixing bowl I was using over simmering water, thereby creating one less dirty dish and melting the chocolate more gently — over moderately low heat, whisking occasionally, just until melted. Remove from heat and whisk in sugar, eggs, vanilla, and a pinch of salt until well combined. Whisk in flour until just combined and spread in baking pan.
Make cheesecake batter: Whisk together cheesecake batter ingredients in a small bowl until smooth. Dollop over brownie batter, then swirl in with a knife or spatula.
i used knife to swirl the batter
Bake brownies: Bake until edges are slightly puffed and center is just set, about 35 minutes. Serve warm or at room temperature.
so just you know, im not a fan of new year..
